Is this too bulky for a whitewater kayak?
I would choose a lower profile vest for kayaking. While this vest is fine for swinging oars around, it would definitely limit mobility in a kayak.

No. It is a Type III. A class 5 also has a head pillow.
How hot is this in warm weather?
If you're in good white water and not wearing a cotton t-shirt, you won't overheat. It does act as insulation in cold rivers. It's an excellent vest for big water.
