Will the self adhesive stick to fiberglass?

Should. I see no reason why it wouldn’t.

I am considering using this to cover/hide a cracked interior car dash panel. How thick is the material? How hard is it to trim with scissors/scalpel?

I would not use for that, unless you plan to cover the whole dash, plus I think there would be a problem keeping attached in hot sun.
