For kayaks wider than 34 inches, you'll want to consider the 19-inch height of the mounts and how it fits with the width of your watercraft. The ideal crossbar to install our rack on is 1 to 2 inches wide. For wider ones, you'll want to tighten extra.

where are they made? - No

Will these mount to a one inch square bar of metal stock? - I think so but you would have to be careful they were straight every time you put them on. The mounting plate that goes on top has a 2 inch wide channel, the bottom plate has a flattened v shape that works with square, round, or oval crossbars. I bought this brand for the flattened oval crossbars on Ford factory roof rack and it works.

Do they work for cross bars that are 2 1/4" wide x 3/4" high? - Yes

Can this hold a canoe? - I see no reason why it couldn't. abit of an overkill, why not just put it upside down on the crossbars and tie it down.
